Candied Walnut, Apple and Feta Salad

This is one of Debbie’s favourite salads. It’s great served on its own as a light lunch or with a delicately flavoured fish for dinner.

Ingredients
Serves two as a light lunch

100g baby spinach
1 red apple, grated but not to finely
handful of candied walnuts (you can buy them or make your own)
50g crumbled feta
1 tablespoon apple cider
1 tablespoon wholegrain mustard
3 tables spoons extra virgin olive oil
salt and freshly ground pepper to taste

Method
Whisk together the apple cider, wholegrain mustard, olive oil, salt and pepper and set aside.
Layer the spinach, feta, apple and walnuts on a plate and top with the dressing.
Serve on its own or as a side with fish or thinly sliced pork.
