If you must you eat something green on St Patrick’s Day, then you might as well make it something tasty too. Our Green Pea and Ham Salad is what you’re looking for.
Time: 10 minutes
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 3 tablespoons extra virgin olive oil
- 250g snow peas
- 2 handfuls shredded ham
In a bowl, mix the mustard, lemon juice and olive oil, and then season to taste. Trim the tops from the snow peas, remove the strings and finely slice. Toss the snow peas in the dressing and serve salad topped with the ham.
