“Waste not want not” is a good motto these days and Debbie’s quick and simple Devilled Whitebait is a cheap and tasty treat that wastes nothing.
Ingredients
250g whitebait
6 tablespoons plain flour
2 teaspoons cayenne pepper
Salt and pepper to taste
Oil for deep frying
1 lemon
Method
Rinse the whitebait and pat dry on kitchen roll.
Mix together the flour, cayenne pepper and salt and pepper on a large plate.
Toss the whitebait in the flour and shake off excess.
Heat the oil in a deep pan and when very hot, cook the whitebait in two batches for two minutes, until crisp and golden brown.
Drain on kitchen paper and serve with a lemon wedge.
Tasty enough on it’s own as a snack or serve with a green salad and some mayonnaise.
