Egg Drop Soup

Our Egg Drop Soup is deliciously warming and good for the soul. Eggs are full of great nutrition, including easy-to-digest protein.  

Serves: One

Time: 20 minutes

Ingredients

  • 2 cups chicken broth
  • 2 green onions, chopped
  • 1 teaspoon soy sauce
  • 1/4 teaspoon grated ginger
  • salt and pepper, to taste
  • 1/4 cup chopped mushrooms
  • 1 egg, lightly beaten

 

Method

Place the broth, onions, soy sauce, ginger, mushrooms into a pot. Bring to a boil and then turn down to simmer. Slowly pour the beaten egg into the soup while stirring gently. The egg will cook immediately and form ribbons.
