Potato and Leek Soup is a classic comfort dish that is hearty and filling, and will warm you up in no time.

- 15g butter
- 75g leeks, chopped
- 50g brown onion
- 250ml chicken stock
- 175ml milk
- 50ml cream
- 125g potato salt and pepper, to taste
- finely chopped chives, for garnish
Melt butter in a saucepan and add the chopped leeks and onion. Cook until onions are translucent, stirring occasionally. Add stock and milk and bring to the boil. Add potatoes, season with salt and pepper, and simmer until vegetables are tender. Using a blender, blend the soup and adjust the seasoning if necessary. Serve sprinkled with chives.
