Vegetable Minestrone Soup

YOURLifeChoices subscriber Verona has shared her family’s favourite soup recipe Vegetable Minestrone Soup.

Ingredients
1/2 cup chopped onion
1 leek, white part only, chopped
2 cloves of garlic
1 can crushed tomatoes
4 potatoes, quartered
2 carrots, sliced
1 celery stalk, sliced
1/2 cup barley
1 1/2 cups corn
1 cup (frozen) peas
1 can white beans (drained)
1 teaspoon chopped basil
1 bay leaf
1 tablespoon salt
1 teaspoon black pepper

Method
First sauté garlic, onions and leek.
Then add tomatoes and one full can of water, potatoes, celery and carrots and cook for 25 minutes.
Then add barley and cook for a further 10 minutes.
Finally add remaining ingredients and cook 20 minutes or until barley is done.
Add salt and pepper to taste.
Serve with warm crusty bread and enjoy.
