Tuscan Penne

Looking for a new way of serving pasta? Try this healthy penne for dinner tonight.


  • 1 onion, finely chopped
  • 1 carrot, finely chopped
  • 1 celery stick, finely chopped
  • 2 tablespoons finely chopped parsley
  • 1/3 cup olive oil
  • 375g minced beef
  • 1/2 cup red wine
  • 1 x 440g can crushed tomatoes
  • Salt and freshly ground black pepper
  • 1 cup beef stock
  • 500g penne pasta
  • 1 cup Parmesan cheese, grated

Sauté the onion, carrot, celery and parsley in the oil for five minutes. Add mince, when browned pour in the wine and stir for five minutes. Add tomatoes, salt and pepper, stir well and simmer for five minutes.

Add two or three tablespoons of stock at a time, stirring at intervals to keep the sauce moist. Simmer for around 40 minutes.

In the meantime, cook the pasta according to the packet instructions. Drain, and then add to the meat sauce. Toss well and sprinkle with the Parmesan cheese to serve.
