Sweet Potato Casserole

Summer has gone, winter is on the way, so the time is nigh for some comfort food. There is nothing more appropriate than a hearty casserole to beat the winter blues, and Susan’s Sweet Potato Casserole is one of the best.


1.5 kgs sweet potatoes
350 mls sweetened condensed milk
1/2 cup butter (melted)
4 eggs
2 cups sugar
1 teaspoon cinnamon
1 teaspoon mace
1/2 cup butter (melted)
3/4 cup brown sugar
1 1/2 cups breadcrumbs
1 cup pecans


Firstly, boil the sweet potatoes until they are cooked (30 minutes). Once they are, drain and peel about 4 cups worth. Preheat oven to 400 degrees.
Grease a regular to large baking dish. Mash the potatoes. Add the milk, butter, eggs, sugar, cinnamon, and mace. Mix fully, pour and scrape into the baking dish, and bake the ingredients for 20 minutes.
While the ingredients are baking, prepare the topping. Mix butter, sugar, graham breadcrumbs, and pecans. Spread topping on the casserole. Bake for an additional 15 minutes.
