Recipe: Simple Cheesecake in a Glass

Looking for a quick and tasty dessert? Believe it or not, our Simple Cheesecake in a Glass only takes five minutes to make. You might as well make two while you’re at it.

Serves: One

Time: Five minutes

Ingredients

  • 1/2 lemon, zested, plus 1 teaspoon lemon juice
  • 1 heaped teaspoon lemon curd
  • 60g tablespoon cream cheese 
  • 75g blueberries
  • 2 rough oatcakes, crushed


Method

In a bowl, mix together the lemon zest, lemon curd and cream cheese.

Gently crush half the blueberries with a fork and add the lemon juice.

Add remaining blueberries to the cream cheese and lemon curd mixture.

Place the crushed blueberries in the bottom of a glass, and then top with the lemon/blueberry cheese mixture.

Sprinkle over with oatcake crumbs and garnish with some lemon zest and a blueberry.
