4 ingredients Mandarin and Almond cake

3 mandarins1 cup (200g) sugar6 eggs2 cups (250g) almond meal

 

Cover mandarins (skin and all) with water, bring to boil then simmer for 1 hour. Cool completely, remove seeds and puree. Using an electric blender, beat the eggs and sugar together until thick and glossy (about 12 minutes), add the puree and almond meal. Stir well. Pour into a paper lined 22cm / 8-inch cake tin and bake in a preheated 160C oven for 60 minutes.

 

Optional: Kelly Mauger, a ‘Dynamite Chef’ at Bella Boo Café in Mundubbera, Australia advised that you can substitute mandarins with apples, bananas or oranges. She made it with oranges, topped with Cream cheese icing and sprinkled with Poppy seeds…BEEEEEUUUUUUUTIFUL!!!!

 

Sugar can be replaced with organic Stevia which will turn it into a healthy food

You can do the same with oranges Radish.  Often used to make an orange one.

Abby -  My Sister makes these all the time and she too uses Oranges. She also makes them into Cupcakes and freezes them until she needs them when unexpected guests call for a visit. They are very tasty, she also adds Poppy Seeds.

I have quite a few frozen mandarin segments in our freezer.  It says to simmer with the skins ON.  I have no skins...would this effect the outcome I wonder??

It also says to remove seeds and puree...I imagine you don't use the skins??

Seems a lot of eggs 6 but it sounds lovely.

Think they are refering to the thin skin underneath the peel ... I removed my thin skins when I did mine.

I made some jelly cakes for the first time a week or so ago and froze the lot...nice to have when you feel like something with your coffee or tea.  Defrost in micro for about 30 seconds or so.

Tomorrow Xmas Eve I am going to make a Black Forest cheesecake for the first time...easy recipe.
