A SLOW COOKER RECIPE FOR THOSE THAT HAVE ONE.

Sumac Pork with Citrus Sauce

For a 3.5 to 4.5-litre slow cooker
Serves 4-6

Ingredients

1.2–1.4kg boned pork shoulder, visible external fat removed
3 teaspoons cornflour mixed to a paste with 1½ tablespoons cold water
Prepared couscous, to serve
Green salad, to serve

For the Citrus Sauce
3 teaspoons ground sumac
1 tablespoon paprika
½ teaspoon onion powder
½ teaspoon garlic powder
1 teaspoon ground coriander
1 teaspoon ground cumin
½ teaspoon ground cardamom
Finely grated rind and juice of 1 small lime
Finely grated rind and juice of 1 small lemon
Finely grated rind and juice of 1 orange
2 teaspoons sugar
2 teaspoons maple syrup or mild-flavoured honey
2 teaspoons redcurrant jelly
½ teaspoon salt
1 tablespoon tomato sauce (ketchup)

Method

To make the citrus sauce, mix all the ingredients together.

Place the pork in the slow cooker and pour over the sauce. Cover and cook on High for 4–5 hours or Low for 8–9 hours or until the pork is tender.

Remove from cooker and keep warm. If necessary, remove the lid and turn the cooker to High for 10 minutes, then stir in some or all of the cornflour paste. Cook, uncovered, for 5 minutes more, adding salt and pepper to taste. Skim off any fat from the surface.

Serve the pork sliced with couscous and a green salad.

Note: Any leftover pork makes a delicious sandwich filling, combined with other salad ingredients.

Thought it sounded nice too Radish.  I will try it probably next week sometime.

We had a Chinese Steam  Boat on Wednesday night.  That was lovely.  You have a portable cooktop, you could do it too.  It's all done at the table.  Easy meal because you get everything ready early and then just sit at the table to enjoy.

It's Red Wine Tuesday next week for our group.  Daughters turn to make the meal (so Mum has to come to the rescue).  Looks like we will be having SLOW COOKED BEEF CHEEKS on a bed of potato with a salad.  Now just have to rack my brains for a dessert.

I had a chinese steam boat given to me by a friend in Darwin many moons ago Sandi.  I think I got shot of it as I never used it.  Was an authentic one from China...I think I was a bit scared of using it due to what it was made out of.

I still have a fondue set (electric plug in one)....antique now  LOL.  Never used that either.

Radish I just have a big metal bowl & lid  that came with my hotplate.  It was an extra (free) for the hotplate (induction I think they call the electric hotplate).

So it's easy to use.  Those Chinese steamboats are pretty expensive if you want to buy them and not much use for anything else,  but the bowl is useful for lots of other dishes.

You really should try a meal.  I use homemade chicken stock.  slice some chicken breast, pork fillet, beef into thin slices.  Also have mussels, some fish slices (fish has to be able to hold together when cooked ie. Red Ling/Flathead/Blue Grenadier, also have a few prawns, some baby corn, thin sliced carrot, some choy sum/bokchoy , spring onions,whole small mushrooms.  Also if you like Noodles, I usually buy the Long Life Noodles, not dried noodles or I throw in a packet of chicken noodle soup.

Jenny & I add Chilli to our bowl because of Bob.  Makes a lovely meal.

 A TIP is freeze your chicken breast & pork & Beef meat.  It's much easier to slice if it's frozen.  For the beef and pork Woolies and Coles sell it thin sliced in store, if you don't want to cut it.  If I buy them I just cut them into smaller pieces.  Freeze what I don't use ready for the next steamboat.

You can put grated ginger or crush garlic in the stock and whatever veges you like.

 

 

Thanks for all that info Sandi..much appreciated.  Yes, freezing is a good idea if you want to slice thinly...I usually do that myself.

Wondering if I could use the electric fondue...just one large bowl...mm...might give it a go...you have wetted my appetite now Sandi LOL.

Hey give the peanut biscuits a go...that is if you are able to eat that type of thing....they are very moorish...so only have a few..if you can lol.
