AquaFaba

The new Buzz in Nutrition. AquaFaba is the liquid from canned legumes and the liquid has been found to be high in protein, with whipping it can be used as an egg white replacement and great to make meringues, Pavlovas etc. Best liquid to use is that from Chick Peas as no strong taste.

Thanks for that info Vivity...quite fascinating.  Think I will try the icecream recipe.

Why use a egg replacement and not use eggs.

Pete :)

Typical human response wanting to eat the chicken's babies ... be like eating human embryos?

How amazing is that ??

Aquafaba  replacing raw egg whites in meringues and marsmallows

How yummy does that look ?

Just one problem what does one do with the canned legumes or chick peas ?

Not the sort of thing I would eat :(

Do not like tinned foods ..... come to mention it , neither does

Sweet Thing ....Spoilt dog .... suppose I could feed peas and legumes to the worms ?

Use Chick Pes to make Hommus, I add them to curries and stews for protein adds extra crunch factor too.

put chick peas into soup made with tin of kidney beans, tin of tomatoes, some oregano, basil, salt and pepper, onion, garlic, celery and throw in some chorizo sausage cut into slices or any other sausages.   I do this all the time in my crock pot...can also do in the microwave.   The recipe I use is out of a microwave cook book...womens weekly one.

I will tell you a funny story Viv about meringue.

We had an Indian family move into next door.  His parent's came out for 6 months holiday and when they were leaving I thought it would be nice to make them something special.  Thought nothing more special than Pavlova.

Now I knew they were vegetarian, as she had told me.  So I set to and made the most beautiful Pavlova.  Decorated it with cream and tropical fruit.  Took it in and gave it to them.  They absolutely loved it.

Then a few weeks later she asked me could she have the recipe as her parent's would be coming out to stay.  I said to her that as she didn't have a mixer, when she wanted one she could buy the ingredients, I would mix it up for her and she could cook it.  OK she said and we left it at that.

Then one day we were talking about cakes and things and she said she never made cakes because they had eggs in.  I said "Oh you don't eat eggs".  She said "no."

I said "You told me that you were vegetarian, but if you don't eat eggs then you are a Vegan not a vegetarian."

I was mortified and didn't dare tell her how Pavlova was made, (what they didn't know wouldn't hurt them right?) and wondered how I was going to get out of making her parents a Pavlova.

Well now thanks to you I can make them a Pavlova when they come without feeling guilty.

PS Abby I don't like Chick Peas either but guess I could use them in soup.

I hate chick peas but we do use a lot of them to make hommus. They don't taste like chick peas when they become hommus so become edible lol. Good trick to know Viv. I will save the juice from now on. Never make pavlova I but do put egg whites in other things.

Never eaten hommus either well at least not knowingly .... in view of what Sandi and Radish are saying

Sandi, your story reminded me of something similar happened to my sister.

She was married (not now) to a prominent lawyer in South Africa.  He invited some people for dinner and did not let on they were Jewish.  She cooked a pork casserole and it was too late to cook anything else so she thought well if they dont eat pork they willl not know what they are eating so she dished it up.

As a precaution she also lowered the dimmer switches on her lights over the dining table and they ate the meal   in semi darkness.   My sister is a bit of a character and she actually pulled it off.

I thought I would bring this up again for Vegans and Vegetarians so many ways you can use AquaFaba as an egg substitute, just click on the address in the opening statement to take you to the recipes.
