Cauliflower soup recipe with a twist

Saw this on Bens Menu on telly yesterday.

Very easy and I will give it a go...different.

ROASTED CAULIFLOWER SOUP…..EASY  3 MAIN INGREDIENTS

 

INGREDIENTS 
(SERVES 4)
1 head cauliflower, roasted florets 
750 ml chicken stock 
2 tbsp Barilla Pesto with basil & rocket 
Pepitas, to garnish
Pine nuts, to garnish 
Pinch of salt
Oil, to garnish

 

DIRECTIONS

  1. Add cauliflower and stock into a large saucepan and bring to the boil. Cook for 5-10 minutes or until the cauliflower is tender. Remove from heat. 
  2. Add 1Tbsp of the pesto and with a stick blender blitz until a smooth consistency.  Add another Tbsp of pesto and stir through to combine. 
  3. Serve with pine nuts and pepitas and drizzle of oil.?

BEN'S TIP: to roast the cauliflower, preheat your oven to 200°C. Cut florets from cauliflower and place onto a oven try that is lined with baking paper. Drizzle with oil and pinch of salt,  place into the oven and bake for 30 minutes, allow to cool.

Abby -  That soup looks very tasty.  Another one I love to cook in the Winter is Lentil Soup. I buy the small orange lentils. Wash 2 cups  of Lentils thoroughly in a pot until the water runs clear. Fill the pot with cold water until the lentils are just covered. Slowly bring to the boil and skim off the cloudy bits. I add a teaspoon of curry powder and some Turmeric for the colour. It will slowly thicken up and keep stirring. If it gets too thick add a little hot water to tone it down. I fry up 3 onions until brown and add to the lentils when ready. I never use salt so you can add what you like. 

Don't forget to add

                        

before you serve it to Reagan

Make sure you wash the feet before adding to plate.

I have a packet in the pantry and I will make it this winter :)

I will have to  put salt/or chicken stock in mine I think as there is no way hubby would eat something without salt in it...I can eat without sometimes but mostly I need to put it in.

 

Hola, have you always not eaten salt or did you wean yourself off it??
