Vegetarian meal

I saw this on the cooking show with Justine Schofield and made it last night.  I loved it.

Had two left over and had one heated up in microwave for breakfast...still great.

I used the Coles brand smooth ricotta and I was too lazy to deseed the tomatoes.  Used what we had in the garden as I have so many at the moment.

Have relative who is vegetarian and this will be great for when she visits.
