1 cup sugar
350g plain flour
1 large teaspoon ground ginger
Pinch of salt
1 teaspoon ground ginger
1 & 1/2 tablespoons golden syrup
100g icing sugar
Preheat the oven to 175’C
Cream the butter and sugar together in a bowl
Add flour, ginger and salt. Knead well.
Press the mixture into a rectangular tin.
Bake for 20-25 minutes.
To make the icing: melt butter, ginger and golden syrup in a saucepan.
Mix in enough icing sugar to make the icing a thick consistency.
Spread the icing over the base while still warm.
Cut into squares and cool.
