Louise Cakes from Gran’s Kitchen

Louise Cakes are a tasty sweet treat straight out of Gran’s Kitchen. They’re quick and easy to make, and perfect for afternoon tea time with friends.

Meringue

Method
To make the cake, cream the butter and sugar, then add egg yolks and beat well. Stir in sifted flour and baking powder. Press mixture into greased tray. Spread jam over mixture.

To make the meringue, beat egg whites and sugar together until thick, then fold in coconut.

Spread the meringue on top of the cake.

Bake at 180°C for 30 minutes. Cut into squares.
