Poached Pears with Ice Cream

This classic French dessert of poached pears served with vanilla ice cream and a hot dose of chocolate sauce is like a decadent grown-up sundae. It’s the perfect after-dinner treat on a warm summer night.

Method
In a deep wide pan over a medium heat, add the water, sugar, vanilla pod and lemon juice and bring to the boil.

Peel the pears, discarding the stalks and cores. Add pears into sugar syrup and simmer for 10–15 minutes until translucent and tender. Set pears aside cool and soak through with syrup.

Roughly chop chocolate. Bring 75ml water to the boil and then add the chocolate pieces, whisking until smooth. Be sure to remove from heat as soon as chocolate has melted.

Serve up the pears in two bowls with a generous scoop of ice cream on each bowl, then pour over the warm chocolate sauce. Enjoy!
