Banana Bread Pudding

A sweet, layered Banana Bread Pudding is the perfect way round off a meal. This recipe is extremely easy and serves two people. Enjoy!

Serves: Two

Time:  90 minutes

Ingredients

  • 1/3 cup milk
  • 1 tablespoon dark brown sugar
  • 1/8 teaspoon ground cinnamon
  • 1 large egg
  • 2 cups cubed baguette
  • Cooking spray
  • 1 ripe banana, mashed
  • 1 tablespoon granulated sugar 
  • 2 tablespoons caramel topping
  • Icing sugar (optional)

 

Method

In a small bowl, mix the milk, dark brown sugar, cinnamon and egg and whisk together. Place 1/2 cup bread cubes into each of the two ramekins coated with cooking spray. Spoon two tablespoons milk mixture over each serving, and top with 1/4 cup banana. Sprinkle each serving with 1 1/2 teaspoons granulated sugar. Repeat procedure with remaining bread and milk mixture. Chill for 30 minutes then remove from fridge and allow to come to room temperature (so the ramekins don’t crack) Preheat oven to 180°C. Bake for 50 minutes. Spoon one tablespoon caramel sauce over each serving. Sprinkle with powdered sugar, if desired.
