Banana Nut Muffins

With sweet spices such as cinnamon, nutmeg and vanilla, these Banana Nut Muffins are a few tasty steps above your average muffin.

Ingredients

    • 3/4 cup brown sugar (can reduce to 1/2 if you prefer)
    • 1/3 cup butter, softened
    • 2 eggs
    • 2–3 large bananas
    • 3/4 cup wholemeal flour
    • 3/4 cup plain flour
    • 1/2 teaspoon ground nutmeg
    • 1/2 teaspoon ground cinnamon
    • 1/2 teaspoon pure vanilla extract
    • 3/4 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1/2 cup chopped walnuts

 

Method

Preheat your oven to 180°C. In a bowl, beat the sugar, butter and eggs. In a separate bowl, mash the bananas and stir them into the butter mixture with the nutmeg, cinnamon and vanilla. Add the baking soda and salt, and combine. Next, add in the flours and stir. Once combined, fold in the nuts. Pour into a greased muffin pan and bake for 15–20 minutes until golden brown and cooked through.
