10-minute Tuna Pasta Salad

Want a quick and simple meal? Look no further than this tasty Tuna Pasta Salad. You should already have most of the ingredients for this healthy and nutritional dish, so what could be simpler?

Serves: Two
Time: 10 minutes

Ingredients

  • 125g mini shell pasta
  • 1 standard size can tuna
  • 1/2 cup baby peas
  • 1 tablespoon finely chopped coriander
  • 1 clove garlic, minced
  • 1/2 stalk of celery, finely chopped
  • 1/2 lime, juiced
  • 1/2 tablespoon mustard
  • 1 tablespoon red wine vinegar
  • 1 tablespoon olive oil
  • salt and pepper, to taste

Method
In a large saucepan, cook the pasta until al dente, following the directions on the packet, and then rinse with cold water. In a large bowl, combine all remaining ingredients with the pasta and stir. Serve immediately.

Serving suggestion: if you don’t like peas, why not try corn instead?
