Apricot Ginger Chicken

A blast from the 1980s, this Apricot Ginger Chicken is sure to delight with natural flavours and simple ingredients. Why not step back in time in the kitchen tonight?

Ingredients

    • 1/4 cup flour
    • 2 skinless chicken breast halves
    • 1 tablespoon olive oil
    • 1/4 cup apricot jam
    • 1/2 cup canned apricots in light syrup
    • 1 tablespoon soy sauce
    • 1 tablespoon water
    • 1/8 teaspoon ground ginger powder
    • salt and pepper, to taste

Method

In a plastic bag, put the flour, salt and pepper and shake to mix. Add the chicken breasts and shake again to coat. In a pan, heat oil over medium-low heat. Add chicken and cook, turning once, until cooked through, about 10–15 minutes. While the chicken is cooking, mix the remaining ingredients in a small saucepan and heat gently over a low heat. Pour apricot mixture over the cooked chicken and serve with steamed rice and greens.
