Baked Mandarin Custard

Need a warming dessert to impress dinner guests? Our Mandarin Custard will not fail to impress – and it’s failproof too, since it’s baked in the oven: no risk of a ‘scrambled’ mess!

Ingredients

  • 6 mandarins
  • 1 tablespoon marmalade
  • 275ml natural yoghurt
  • 2 eggs, separated
  • 1 tablespoon soft brown sugar

 

Method

Pre heat the oven to 180°C.  Finely grate the rind of three mandarins. Divide the marmalade between four ramekins. Divide the mandarins into segments and split between the dishes.

 In a bowl, beat the yoghurt, egg yolks, sugar and grated rind. In a separate bowl, whisk the egg whites until stiff and fold into the yoghurt mixture and pour over the mandarins.

Place the dishes in a roasting pan filled with enough water to come half way up the sides of the ramekins. Bake for thirty-five minutes or until the custard is set and firm to touch.
