Apple and Cranberry Stuffing for chicken or turkey

Whether your preference is turkey, chicken or duck, the truth is nothing completes a festive meal like a hearty, classic stuffing. This recipe is a little different, using apples and cranberries to add an interesting, sweet kick and offset the richness of the stuffing.

Note: This recipe requires 30 minutes of cooling time before stuffing your chicken or turkey, so it’s best made a day or two before.

Yields: Enough stuffing for one 4-5kg turkey or three 1.8kg chickens. Reduce amounts accordingly for fewer chickens.

Ingredients

  • 125g butter
  • 2 onions, diced
  • 2 sticks celery, diced
  • 2 green apples, diced
  • 100g sliced pancetta, roughly diced
  • 4 cups breadcrumbs
  • 1/2 cup roasted macadamias, roughly diced
  • 1 cup dried cranberries
  • 2 tablespoons sage, chopped
  • 1 teaspoon thyme leaves
  • 1/3 cup parsley, chopped

Method
In a large frying pan over medium heat, melt the butter and add the onion, celery and apples. Cook for 5 minutes, then add the pancetta. Cook until softened.

Next, add the breadcrumbs, nuts, cranberries and herbs. Mix well so that all ingredients are evenly combined. Remove from heat and allow to cool almost completely before stuffing chicken or turkey, or refrigerate until required.
