Cheesy Tomato Soup

Tomato and cheese together creates ‘umami’ – which translates to ‘deliciously satisfying’ – and it’s this tastebud-pleasing combo you’ll find in our Cheesy Tomato Soup.

Serves: Two

Time: 30 minutes

Ingredients

  • 1 tablespoon unsalted butter
  • 1/2 medium brown onion, chopped
  • 2 cups peeled, seeded and chopped fresh tomatoes
  • salt and pepper, to taste
  • 1/2 cup shredded mozzarella


Method

In a large pot over medium-low heat, melt the butter and then add the onions. Stir and allow to cook for about five minutes until softened. Add the tomatoes and stir well. Increase the heat to medium and add the cheese along with half a cup of water. Cover the pot and simmer gently for 15 minutes, stirring occasionally. Season with salt and pepper and serve immediately with crusty sourdough.
