Cream Cheese Crumble Muffins

Take creamy vanilla muffins and top with streusel crumble and you have our Cream Cheese Crumble Muffins. They’re a guaranteed winner for afternoon tea or as a sweet snack.
Serves: 12 muffins
Time: 1 hour

Ingredients
Muffins:

  • 3 cups plain flour
  • 1 3/4 cup sugar
  • 1 1/3 tablespoons baking powder
  • 1 teaspoon sea salt
  • 2/3 cup whole milk
  • 1/2 cup unsweetened apple sauce
  • 2 large eggs
  • 225g cream cheese, softened
  • 1 teaspoon vanilla extract

Streusel topping:

  • 1/2 cup unbleached all-purpose flour
  • 1/2 cup sugar
  • 4 tablespoons butter

 

Method
Preheat oven to 180°C  and prepare a muffin tray with paper liners. Combine the flour, 1 cup sugar, baking powder and salt into a large bowl. In a separate bowl, combine the milk, apple sauce and 1 egg. In another bowl, combine the cream cheese, 3/4 cup sugar, the second egg and vanilla. Blend with a hand mixer until smooth.
