Easiest Banana Choc Chip Muffins

These must be the easiest (and tastiest) banana choc chip muffins in the world. They’re moist and light, with a good balance of banana flavour and sweet bursts of chocolate.

Makes: 12–14

Ingredients

  • 1 egg
  • 1/2 cup milk
  • 2 cups self raising flour
  • 1/2 cup brown sugar
  • 1/5 cup vegetable oil
  • 1 teaspoon baking powder
  • 1/2 cup dark choc chips
  • 4 ripe bananas, mashed
  • 1/3 cup ground nuts (try walnuts or pecans)

 

Method
Preheat oven to 200°C.

In a small bowl, whisk the egg, then add the oil, bananas and milk. Stir to combine.

In a separate bowl, mix together the flour, sugar, baking powder, choc chips and nuts. Pour in the egg mixture, folding until well mixed.

Fill about 12 greased muffin cups until three quarters full. Bake for 15–20 minutes until tops are golden brown and an inserted skewer comes out clean.

Serve hot from the oven, or cooled with a dusting of icing sugar and a cup of coffee!
