Easy Pasta with Homemade Sauce

This low-cost pasta with a simple Italian tomato sauce is as simple as 1, 2, 3! It’s a great basic recipe that allows you to add anything else you might like – basil, olives, mushrooms, bacon – you name it!

Or simply enjoy as is, with a generous portion of Parmesan grated over the top!

Serves: 2

Ingredients

  • 1 1/2 teaspoons olive oil
  • 1/2 onion, chopped
  • 1 garlic clove, crushed
  • 1 400g can Italian diced tomatoes
  • 1 1/2 tablespoons tomato paste
  • large pinch chopped fresh continental parsley
  • 1/2 teaspoon caster sugar
  • salt
  • pepper
  • 200g dried penne pasta

 

Method
In a large frypan over medium heat, heat oil and add the onion, cooking until softened. Add the garlic and stir for about one minute.

Turn the heat up to high and add the tomatoes and tomato paste. Bring contents of pan to the boil, then reduce heat and simmer, stirring for about five minutes. Stir in parsley and sugar, and season with salt and pepper.

While the sauce simmers, cook the pasta in a saucepan of boiling water, following packet directions.

Drain the pasta and add to the sauce. Stir to combine and serve immediately. Grate some Parmesan over the top – and bon appetit!
