Ham, Cheese and Pea Frittata

For a filling, no-fuss anytime meal, why not try this Ham, Cheese and Pea Frittata? Serve with chutney or your favourite sauce to really give it some zing and add a healthy side salad.

Ingredients

  • 1 tablespoon olive oil
  • 1 red onion, thinly sliced
  • 6 eggs
  • 150g leg ham, cut into 1cm cubes
  • 1/2 cup (120g) frozen baby peas (not thawed)
  • 1 cups cooked macaroni or other short pasta
  • 1/2 cup (120g) grated cheddar cheese
  • chutney, to serve

Method

Heat oil in a pan and cook onion for two minutes.  Add ingredients (except eggs and chutney). Whisk eggs and season with salt and pepper. Pour eggs into the pan, reduce heat and cook until almost firm. Place the pan under the grill until golden. Cool slightly, then serve with chutney and salad.
