Kathryn’s Crunchy Ice Cream

Our recipe for Crunchy Ice Cream makes a delicious treat for two and is great for a last minute dessert if you already have the ingredients in your pantry.

Serves: Two

Time: 15 minutes 

Ingredients

  • 2 large scoops of your favourite ice cream
  • 1 cup corn flakes
  • 2 tablespoons powdered sugar
  • 1/4 teaspoon cinnamon
  • 2 tablespoons honey
  • warm chocolate sauce, to serve

 

Method

Scoop the ice cream onto a sheet and place it back in the freezer. In a food processor, combine the corn flakes, powdered sugar and cinnamon and mix for 10–15 seconds. Pour the mixture out into a shallow bowl. Drizzle the honey on top and use your fingers to incorporate the honey into the flakes evenly. Take the ice cream balls out of the freezer, and then roll them quickly in the crumbs. Serve drizzled with warm chocolate sauce.
