Lemon Pudding

Our lovely Lemon Pudding is delightfully tasty and easy to make. The addition of healthy buttermilk gives the pudding a nice, tart taste. However, if you prefer, replace the buttermilk with regular milk.

Serves: Four

Time: 30 minutes 

Ingredients

  • 2 large eggs
  • 1 cup sugar
  • 3 tablespoons corn flour
  • 2 tablespoons all-purpose flour
  • 2 cups buttermilk
  • 1/2 teaspoon lemon zest
  • 1/3 cup lemon juice
  • 1/4 cup butter
  • whipped cream, to serve (optional)

 

Method

In a mixing bowl, whisk the eggs. In a deep saucepan, combine the sugar, corn flour, flour and buttermilk. Cook the mixture on medium heat for 15 minutes. Remove the pan from the heat and slowly mix the beaten eggs into the mixture. Now add the lemon peel, lemon juice, and butter and simmer on low heat for five minutes.

When the mixture thickens, pour it into a glass bowl and mix in the whipped cream.

Scoop the pudding into serving bowls and chill for 30 mins before serving.
