Marmalade Raisin Bread Pudding

The name of our Marmalade Raisin Bread Pudding says it all: easy, affordable comfort food. With only six ingredients, most of which you’ll find in your pantry, you can whip up this pudding any time.

Time: One hour and 10 minutes

Ingredients

  • 9 slices raisin bread, crusts removed
  • 1 1/2 tablespoons marmalade
  • 1 tablespoon caster sugar
  • 3 eggs
  • 2 1/4 cups milk
  • 1 vanilla bean, split and seeds removed

 

Method

Preheat oven to 160°C and grease an ovenproof dish. Spread each slice of bread with marmalade and arrange in the dish, overlapping the slices. In a bowl, add the sugar, eggs, milk and vanilla bean, and whisk until the sugar dissolves. Pour half the mixture over the bread and leave to soak for five minutes. Pour remaining mixture over the bread. Place the dish in a larger baking dish and pour boiling water into larger baking dish until halfway up the sides of the smaller dish. Bake for 50 minutes and serve hot.
