Mediterranean Open Sandwich

Eating on your own? Our Mediterranean Open Sandwich makes for a filling and tasty meal – just throw these Mediterranean ingredients onto a slice of sourdough for an easy meal-in-one bruschetta.

Ingredients

  • 1 tomato
  • 4 garlic cloves, unpeeled
  • 2 teaspoons extra virgin olive oil
  • 10 basil leaves
  • 1 slice thick sourdough bread
  • 2 slices provolone cheese
  • 2 slices prosciutto
  • 1 small handful rocket
  • 1 teaspoon balsamic vinegar


Method

Preheat the oven to 200°C. Cut the tomato lengthways and place in a small roasting pan with the garlic. Drizzle with olive oil and season with salt and pepper. Roast for 25 minutes until the garlic is soft. Add the basil leaves and continue to cook for five minutes. Remove from oven. Next lightly toast the bread on both sides. Peel the roasted garlic cloves and spread on toast, top with provolone, mortadella, rocket, basil and roasted tomato. Drizzle with olive oil and balsamic vinegar.
