Moist Pear and Almond Pudding

Our Pear and Almond Tart is easy to make, but is still a little special. So why not make it for dessert when you have friends over for dinner? They’ll talk about it for days afterwards.

Serves: Four

Time: 45 minutes

Ingredients

  • 1 cup water
  • 1/2 cup sugar
  • 6 pears
  • 250ml milk
  • 4 eggs
  • 2 tablespoons caster sugar
  • 60g ground almonds
  • 2 tablespoon self-raising flour
  • 1–2 tablespoons flaked almonds


Method

Preheat oven to 180°C. In a saucepan, mix water and sugar over medium heat, stir to dissolve sugar and boil for two minutes. Put aside to cool. Peel, halve and core the pears, then cut into quarters and drop into the syrup, before returning to the heat.Simmer gently until the pears are just tender. Lift out, drain and arrange spoke-like in a flan dish. In a separate bowl, whisk milk, eggs and sugar until well combined and then add ground almonds and flour and beat until the batter is smooth. Pour over the pears, scatter flaked almonds over the top and bake for half an hour. Serve warm with ice-cream or cream.
