Peach Cobbler

Simple to make, yet special and delicious, our Easy Peach Cobbler will surely put a smile on anyone’s face. Serve it for dessert or even for breakfast – we call it bressert!

Time: One hour

Ingredients

Batter:

  • 1⁄2 cup melted butter
  • 1 cup flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1⁄4 teaspoon salt
  • 2⁄3 cup room-temperature milk
  • 1 room-temperature egg

 

Filling:

  • 1 (800g) can sliced peaches, drained
  • 1/4 cup sugar
  • 1 teaspoon cinnamon
  • 1⁄2 teaspoon nutmeg


Method

Preheat oven to 180°C and grease a square cake tin (about 25cm x 25cm).

For the batter, melt the butter and pour it into the cake tin. In a bowl, mix the flour, sugar, baking powder and salt. Stir in the milk and egg, then pour the mixture evenly over the melted butter.

For the filling, combine the peaches, sugar and spices, then evenly spread over batter – do not mix!

Bake cobbler for 35–45 minutes, until golden brown and the batter rises to the to the top covering much of the peaches. Serve warm with ice-cream or cream – or natural yoghurt and nuts if you’re having it for breakfast.
