Peanut Butter Corn Flake Slice

Our Peanut Butter Cornflake Slice is ideal for many occasions: make it for the grandkids, enjoy it for afternoon tea with friends, take it to a backyard barbie or keep it all to yourself!

Serves: Six

Time: 30 minutes

Ingredients

  • olive oil for greasing pan
  • 1/4 cup shredded coconut
  • 1 cup brown sugar
  • 1/2 cup honey
  • 1 cup peanut butter
  • 4 cups cornflakes


Method

Lightly grease a 20cm x 20cm square dishwith the olive oil and set aside.

In a pan over a medium-high heat, toast the coconut, then set aside.

In a large pot over medium-high heat, combine the brown sugar, honey, peanut butter and two tablespoons of water until the peanut butter melts and the mixture begins to bubble. Then remove from the heat and stir in the cornflakes and toasted coconut until well combined.

Use wet hands to carefully pack warm cornflake mixture into prepared pan. Allow to cool for 30–60 minutes. Slice into squares and serve.
