Berries and Coconut Cream

Berries are the perfect choice for a summer evening dessert, and by adding the cream of coconut to the berries, you’ll have a simple yet beautiful and rich dessert.

Serves: Four

Time: 10 minutes 

Ingredients

  • 500g mixed berries (such as blackberries and raspberries)
  • 1 tablespoons granulated sugar
  • 1 tablespoons fresh lime juice
  • 1/2 cup heavy cream
  • 1/4 cup cream of coconut 


Method

In a large bowl, gently toss the berries, sugar, and lime juice. With an electric mixer, beat the heavy cream and cream of coconut until soft peaks form. Serve with the berries.

    Well, wont be buying 500g of fresh berries! Very funny having this recipe after the frozen berry disgrace...

    Good point. However not all brands are affected by the current disaster. It's a pity we don't all have a suitable climate and room to grow our own.
    Not exactly an economical recipe or as healthy as it appears either. There is an article about diabetes on the same page. Too much fat in cream and sugar in this recipe. Delete part of the sugar and the lime juice(acidic and not all can digest it) and better choices of cream. It might meet strict diabetic guidelines.

    fresh berries are still available at my COLES supermarket, e.g. blueberries, strawberries, blackberries, raspberries which is great 'cos I've never liked frozen fruits!!

    First thing I thought, but the berries look fresh! We do have the climate for most things, but the farmers are forced by the big three Coles, Woolies and Aldi to grow and sell cheap (which they cant do due to labour costs etc) so they can on-sell at a humongous mark up.

    Thats why we are exploiting the third world. Also agree with Blossom too much sugar cream etcs. Just have them natural. Yum.
