Cheese and Bacon Muffins

Savoury muffins are a great way to start the day, or to nibble on when hunger pangs strike. Have these Cheese and Bacon Muffins on standby for a mid-morning snack.

1 tablespoon + 120mls olive oil
4 bacon rashers, finely chopped
300g self-raising flour
1 teaspoon baking powder
2 tablespoons caster sugar
100g grated cheese
120mls milk
120mls olive oil
60mls sour cream
2 eggs
Salt and pepper to taste

Preheat oven to 200°C and lightly grease a 12-muffin pan
Heat the tablespoon of oil in a frying pan and cook bacon until crispy. Drain and cool.
Sift the flour and baking powder in a bowl, then add sugar, cheese and bacon.
In a jug, whisk together the milk, oil, sour cream, eggs and salt and pepper, then add to dry ingredients. Combine well.
Pour the mixture in to the muffin pan and bake for 20-25 minutes.
Serve straight from the oven or allow to cool and store in an airtight container.
