Font Size:

It seems as if every bakery in Australia claims to have the best vanilla slice. Today, we share the secret to making your gooey custard creation the finest in the nation.

  • 2 sheets puff pastry
  • 1/2 cup caster sugar
  • 1/2 cup custard powder
  • 1 1/2 cups cream
  • 2 cups milk
  • 1 teaspoon vanilla essence

  • 2 cups icing sugar
  • 1 teaspoon butter
  • 1 teaspoon vanilla essence
  • hot water

Preheat oven to at 220°C. Place pastry on a lined oven tray, prick with a fork and bake for 10 to 15 minutes.
In a saucepan, combine sugar, custard powder and cream and stir over medium heat until it starts to thicken. Add milk, half a cup at a time, and whisk until the custard becomes thick.
To make the icing, place icing sugar, butter and vanilla essence in a bowl and add enough hot water to achieve a medium level of texture. Let all components cool and then line the bottom of a 22cm square tin with pastry, followed by the custard, remaining pastry and then icing. Refrigerate for a few hours before serving.

Serving suggestion: you can substitute the icing with a sprinkling of icing sugar.

Custard powder? That’ll be a dodgy slice no matter what you do.
Real cooks make their own custard so the recipe is at best a commercial look alike.
