Coconut Chocolate Chip Muffins

Are the grandkids coming over? Then our Chocolate Chip Muffins with a coconutty twist are the ideal treat to satisfy their tummies – and yours, too.

Makes: 12–14 muffins

Time: 35 minutes

Ingredients

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup thick natural yoghurt
  • 1/2 cup milk
  • 1/2 teaspoon pure vanilla extract
  • 2/3 cups unsweetened desiccated coconut 
  • 2 cups mini chocolate chips


Method

Preheat oven to 180°C. In a large bowl,whip together the butter and sugar using an electric beater. Add the eggs one at a time, beating well after each one.

In a separate bowl, sift the flour, baking soda and salt, and then in another bowl mix together the yoghurt, milk and vanilla.

Switch your mixer onto low speed, and alternate adding the flour mixture and yoghurt mixture into the batter. Mix until the flour is almost combined. Pour in the coconut and 1 1/2cups of chocolate chips. Mix until completely combined. 

Grease a standard muffin tray with cooking oil, and fill each muffin hole with batter. Sprinkle the remaining chocolate chips over each muffin. Bake for 20–25 minutes. Let cool before enjoying.
