Coffee Cake

Our delicious ‘Coffee Cake’ will soon become a favourite. It only takes minutes to make and you won’t need an oven, but simply a mug and a microwave.

Serves: One

Time: Two minutes

Ingredients

  • 1 teaspoon butter, plus 1 teaspoon extra
  • 2 teaspoons brown sugar, plus 1 teaspoon extra
  • 1/4 white flour, plus 2 teaspoons extra
  • 1 tablespoon applesauce
  • 1/8 teaspoon baking powder
  • 2 drops vanilla extract, or to taste
  • pinch of salt
  • 1/4 teaspoon ground cinnamon


Method

In a mug, heat one tablespoon of butter in the microwave for 10 seconds. Stir two teaspoons sugar into the butter until dissolved. Mix in 1/4 cup flour, applesauce, baking powder, vanilla extract and salt into batter until smooth.  Using your hands, mix the extra flour, butter and brown sugar with the cinnamon in a separate bowl, until the batter has the texture of lumpy sand, and then sprinkle over the batter. Cook in the microwave for 50–80 seconds, or until the ‘Coffee Cake’ appears just barely set. Cool before eating.

    no, no you see, I think it means if you are drinking coffee you call it a coffee cake, drinking a cup of tea it's a tea cake, or a beer cake, a wine cake, a soft drink cake, a milk shake cake, a tequila cake, etcetera etcetera etcetera.
    No sorry, I'm being stupid again, actually I thought the same as you.

    Cappy I believe you may be correct in suggesting the tbs. of water should read 'coffee'.

    Just human error. EVEN 'I', 'MYSELF' --- have been known to make the occasional error; or so I've been informed.

    Our apologies for the confusion. This is an Amecian-based recipe, where the coffee cake in a mug actually doesn't have coffee in it but cinnamon, and is eaten alongside your coffee. Here's an explanation from Wikipedia: http://en.wikipedia.org/wiki/Coffee_cake. But we have taken your comments on board about the taste and rejigged the recipe so that it tastes of apples and cinnamon. We hope you enjoy it.

    Hi Drew and thanks to bletch for letting me know that you can mix and cook in the cup. Thanks for amending the recipe, Drew but I am not sure where the tablespoon of butter in the method came from??

    Told you it was American. They arer hopeless for recipes, and flour is the problem. My wife tells me they don't have self raising flour, so, it's plain flour, which begs the question , "What is all purpose flour"? I have said in the past, will someone please read these recipes before publication !.

    What wattage microwave...not mentioned. You need to adjust timing as some are 700 watt and go up to 1000

    I have made this using a similar recipe.
    It needs about 1 tablespoon of unsweetened cocoa
