Savoury Japanese Pancakes

Also known as Okonomiyaki, these delicious cabbage, egg and mince savoury pancakes make a nice change from traditional dinners.

The traditional Japanese name for these pancakes is Okonomiyaki, which is pronounced Oh-Kon-Oh-Mee-Yah-Kee.

Ingredients (makes 2)

  • 1/2 cup plain flour
  • 2/3 cup water
  • 100g pork mince
  • 2 eggs
  • 80g green cabbage, finely shredded
  • 1 shallot, ends trimmed, thinly sliced
  • 1/2 tablespoon vegetable oil
  • Worcestershire sauce, to serve
  • Japanese-style mayonnaise (such as Kewpie), to serve

 

Method
Whisk the flour and the water together until smooth. Cover with plastic and allow to sit in the fridge for half an hour.

Using a non-stick frying pan, cook the mince over a high heat. Stir constantly to break up the lumps, and cook until browned. Transfer mince to a bowl and allow to sit.

Add the eggs to the flour and water mixture and whisk to combine. Stir in the cabbage and shallots.

Add a little oil to a small non-stick frying pan over a medium-high heat. Add half the batter, covering the base of the pan. Sprinkle with half of the mince mixture and cook until the pancake is golden underneath.

Carefully flip the pancake and cook until golden. Transfer to a serving plate and repeat with the other half of your ingredients. Serve drizzled with Worcestershire sauce and mayonnaise.
