Serves: One

Time: 15 minutes

Ingredients

  • 1/3 cup flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon sugar
  • 1 tablespoon butter, cut into cubes
  • 2 1/2 tablespoons milk
  • 2 tablespoons chopped cranberries
  • 2 tablespoons chopped walnuts

Method

Preheat oven to 230°C. In a food processor combine the flour, baking powder, salt and sugar. Beat the butter into the dry ingredients until it breaks up and looks like crumbs. Add the cranberry and walnut pieces with the milk and beat until the dough pulls away from the side of the mixer. Carefully pull the dough away from the blade and shape into a circle, patting it to about half-inch thickness. Bake on a baking tray with baking paper for 10 minutes until golden brown. Leave to cool before eating.
