Spinach and Lamb Meatballs

Our Spinach and Lamb Meatballs will give you a decent dose of iron, which helps your red blood cells to oxygenate your tissues, keeping you feeling alive and energised.

Time: 30 minutes

Ingredients

  • 220g ground lamb
  • 2 cloves garlic, minced
  • 1 tablespoon extra virgin olive oil plus more for greasing the pan
  • 1/2 small white onion, finely chopped
  • 1 egg 
  • 3/4 cup fresh spinach leaves, roughly chopped
  • 1/4 cup plain yogurt 
  • 1/4 cup plain bread crumbs
  • 1 handful fresh parsley leaves, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper


Method

Preheat oven to 190°C and lightly oil a baking tray. In a mixing bowl, mix all the ingredients and use your hand to gently combine the mixture. Form the mixture into golf ball-size balls and place on baking tray. Put in the oven and cook for 15 minutes until fully cooked but still tender. Serve with a salad and mashed potatoes.
