Three Kinds of Impossible Pie

What is so impossible about Impossible Pie? When you make it you pour all of your ingredients into one bowl and mix them together. When it comes out of the oven it has a golden crust and a creamy centre. Impossible? Make one and find out for yourself – it’s as easy as pie.

Basic Impossible Pie

Ingredients
4 eggs
1/2 cup melted butter
1/2 cup plain flour
1 cup sugar
1 cup desiccated coconut
2 cups milk
2 teaspoons vanilla essence

Method
Preheat oven to 170°C (150°c fan forced). Pour all of your ingredients into one bowl and beat until well mixed. Pour the mixture into a greased cake tin and bake for one hour.

Tip: One of our readers has suggested that her mother used to use duck eggs instead of chicken eggs, which makes the centre creamier. If you try it let us know how it goes in the comments below.

 

Citrus Impossible Pie

Ingredients
4 eggs
1/2 cup melted butter
1/2 cup plain flour
1 cup sugar
1 cup desiccated coconut
1 cup milk
rind and juice of one lemon
rind and juice of one orange

Method
Preheat oven to 170°C (150°c fan forced). Pour all of your ingredients into one bowl and beat until well mixed. Pour the mixture into a greased cake tin and bake for one hour.


Passionfruit Impossible Pie

Ingredients
4 eggs
1/2 cup melted butter
1/2 cup plain flour
1 cup sugar
1 cup desiccated coconut
1 cup milk
juice of 4 passionfruits

Method
Preheat oven to 170°C (150°c fan forced). Pour all of your ingredients into one bowl and beat until well mixed. Pour the mixture into a greased cake tin and bake for one hour.
