Serve today’s Crispy Corned Beef Fritters with a side of steamed vegetables or with a healthy green salad for a tasty lunch or dinner; or add some poached eggs and chutney for a winning breakfast or brunch.
Time: 20 minutes
- 1/4 cup self-raising flour
- pinch salt
- 1 egg
- dash of milk
- pinch thyme
- 2 teaspoons grated onion
- 3/4 cup corned beef, finely chopped
- margarine or cooking oil
In a bowl, mix the flour with the salt, beaten egg and milk. Beat into a smooth batter.
Add corned beef, onions and thyme. Heat a pan on the stove and drop in a spoonful of the mixture and press down to form a small patty. Cook on either side until crisp and brown and serve with vegetables or salad while warm.
