If you have a sweet tooth, we have you covered with this recipe. Our Simple Ginger Rocky Road is not for those looking for a low-sugar treat. Sometimes though, it’s nice to be a little indulgent.
Time: 15 minutes, plus cooling time
- 2 x 100g packet white marshmallows
- 1/4 cup chopped walnuts
- 1/2 cup chopped glacé ginger
- 1/4 cup glacé cherries, halved
- 300g dark chocolate
Cut the marshmallows into quarters with wet scissors. Roughly chop the chocolate and melt in a bowl over simmering water until smooth. Alternatively, place in a microwave-safe bowl and heat on medium power for 3-4 minutes, stirring occasionally. Pour a small amount of chocolate into a 20cm round or square cake tin, lined with baking paper, roughly coating the base. Sprinkle the marshmallows, walnuts, ginger and cherries over the chocolate. Top with the remaining chocolate. Cool and allow chocolate to become firm.
Cut the Ginger Rocky Road into squares and store in a cool place.
