Slow-Cooked Chicken Casserole

Our Slow-Cooked Chicken Casserole makes for a comforting meal. Serve the fall-off-the-bone meat with rice and some steamed veggies for an all-round nourishing meal.

Serves: Four

Time: Two and half hours


  • 500g maryland chicken pieces
  • 1 glass red wine
  • 1 1/2 tablespoons brandy
  • 425g tin of tomatoes
  • 2 cloves garlic
  • 2 bay leaves
  • 10 button mushrooms, sliced



Preheat oven to 120°C. In a pan, brown the chicken over a medium heat. Then add all the ingredients into a casserole dish and cook in oven for two hours. Serve with rice and steamed veggies or a salad.
