Easy Banana Fritters

There are so many ways to cook a banana, but our Easy Banana Fritters are by far our favourite. They may be a little naughty, but they’re great as an occasional treat..

Serves: One

Time: 45 minutes

Ingredients

  • 35g self-raising flour
  • 2 teaspoons caster sugar
  • 1/2 teaspoon ground cinnamon
  • 1 banana
  • Oil, for deep frying
  • Ice-cream, to serve


Method
In small bowl, sift the flour in and add a pinch of salt. Make a well in the centre and add 60ml of water while gently whisking. Whisk until just combined. Stand for 30 minutes. In a separate bowl, mix the cinnamon and sugar together and set aside. Cut the banana in half lengthways. Dip into the batter. Drain off excess batter and deep-fry for two minutes until crisp and golden. Sprinkle with cinnamon sugar and serve with ice cream.
