Sweet potatoes are typically a savoury dish, but if you’re looking for a tasty twist, try this dessert casserole for a treat.
Time: 50 minutes
- 3 cups sweet potatoes, mashed
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- 1 egg, beaten
- 1/2 cup brown sugar plus 1/2 cup of brown sugar
- 1/2 cup milk
- 1/4 cup melted butter plus 2 /12 melted butter
- 2 tablespoons of flour
- 1/2 cup pecans
In a bowl, mix the sweet potatoes, salt, cinnamon, vanilla, egg, brown sugar and milk. Spoon into greased casserole dish and top with the extra melted butter, flour, brown sugar and pecans. Bake at 180°C for 40 minutes and serve with a dollop of natural yogurt.
