Salmon with Mango Chutney

With a good dose of healthy omega-3 fats, this Salmon with Mango Chutney will ensure that your health and your tastebuds are in for a treat.

Serves: 2

Time: 30 minutes, plus four hours for marinating

Ingredients

  • 1/3 cup orange juice
  • 1 tablespoon finely minced ginger
  • 2 teaspoon olive oil
  • 2 teaspoon soy sauce
  • 2 salmon fillets
  • 2 tablespoons hot mango chutney
  • 1 tablespoon orange juice

Method

In shallow bowl, mix 1/3 cup orange juice, ginger, oil and soy sauce, and then completely coat the salmon fillets with mixture. Leave in refrigerator to marinate for four hours.

In a small saucepan over low heat, add the chutney and one tablespoon of orange juice, and heat until the chutney dissolves.

Preheat oven to 190ºC and lightly grease a baking sheet with olive oil. Place salmon fillets on the baking sheet and brush with the chutney mixture. Bake for 10 minutes until the fillets are cooked. Serve with a fresh side salad.
